Australian wine regions

Australia is a large country - Margaret River is further from the Hunter Valley than Jerez in Spain is from Tokaji in Hungary - so, despite the distinctive national approach to wine, Australian wines are not all the same. The wines of Margaret River and of the Hunter Valley differ as much as sherry and tokay do. The three most important wine-producing states are South Australia, Victoria and New South Wales. As well as bulk production, they each have specific premium wine regions.

Wine background
The quietly intellectual Claude Papin, whose winemaking practices and philosophy are very close to those of the leading Alsace growers Jean-Michel Deiss and Leonard and Olivier Zind-Humbrecht, is the Central Loire's 'pope' of 'terroir'. This extraordinary Gamay was grown on the volcanic rock soil locally called spilite, and produced a low yield of 35hl/ha. It was late-harvested, says Papin, 'when the skin began to shrivel'. Papinýs belief is that in the Loire Valley Chenin Blanc 'only expresses itself by botrytisation. If there is none, the wine is always more or less hard. Even my dry wines are made with at least 50% of botrytised grapes'. This sweet wine is made with exclusively botrytised grapes.

Still green-gold at this stage of its evolution, the wine has fresh, elegant lime-flower (linden) aromas. In the mouth it is dense, strong, almost fiery, saturated with sugar and glycerol, yet balanced by fine and sustained acidity. The apple, grape and pineapple flavours need time to settle and marry; the density and power of the wine promises a long evolutionary trajectory.
